Fry Bread “Taco”

Ingredients
Fry Bread
- 2 cup flour
- tsp baking powder
- 1 tsp salt
- 1 cup warm water
- Canola oil (for frying)
- Sharp cheddar cheese (for topping)
White Bean Purée
- 16 oz can of white beans (drained)
- 6 garlic cloves (fried)
- tsp salt
- cup olive oil
- 1 lemon (juice and zest)
Cilantro Crema
- 3 jalapeño (seeds removed)
- 2 cup cilantro leaves
- cup sour cream
- 1 garlic clove
- 1 lime (juiced)
- cup olive oil
- 1 tsp apple cider vinegar
Directions
Fry Bread
Mix all the dry ingredients together, then add the water.
Combine until the dry mixture if fully incorporated. Knead the dough for 5 minutes and form it into a ball to let it rest in a bowl covered with plastic wrap for 10-15 minutes.
When you are ready to fry the bread, divide it into 4 equal parts and roll the dough out so that it is approximately 8 inches in diameter.
Fry at 300 degrees in canola oil for 45 seconds per side.
Drain on a wire rack and sprinkle with salt. When you are ready to assemble, place the white bean purée down first, then the beef, followed by the sharp cheddar with any other vegetables and top with the cilantro crema. Enjoy!
White Bean Purée
Place all ingredients in a food processor and purée until smooth.
Ground Beef
Heat the beef in a large pot and cook until there is not more pink. Add all of the spices and cook an additional 5 minutes to let the spices bloom, let it cool and drain excess fat if necessary.
Cilantro Crema
Place all ingredients into a blender and purée until smooth. Season with a pinch of salt and black pepper if necessary.
