Spicy Tuna Poke

Ingredients
- 16 oz yellowfin tuna (small dice)
- 3 tbsp aioli (mayo)
- 2 tbsp sriracha (more if you like it spicier)
- 1 lemon (juiced)
- tsp fish sauce
- 1 tsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sugar
- 2 cup kale (thinly sliced)
- 1 cup canola oil (for frying)
- 1 cup sweet potato (thinly sliced)
- 1 tbsp scallions, optional garnish (thinly sliced)
- 1 tsp black sesame seeds, optional garnish
- 1 tsp sesame oil
Directions
Dice tuna into small pieces.
Mix the aioli, half the sriracha and lemon juice well in a bowl, add the diced tuna and set aside.
Heat the canola oil to 300 degrees, and gently fry the sweet potato until golden brown and crisp.
remove from the oil and let dry on paper towels, and season with a pinch of salt.
In a separate bowl, mix the remaining sriracha, fish sauce, soy sauce, sugar, and rice vinegar.
Gently toss the kale in the soy mixture.
To plate, separate the kale into two bowls and top with the tuna, garnish with the sliced scallions and sesame seeds if desired.
Finish by topping with the crisp sweet potato chips. Enjoy!
